Confetti Rice (Vegan Dish!)





  
   Here is an amazing dish that will get your taste buds tingling and is great for any time. The fact that it is served cold is even better for those hot nights when turning on the stove just seems like extra work you don't feel up to putting in.

   The recipe is simple and can easily be made alongside another meal then thrown in the refrigerator for later (the best sitting time my family has found is around 24 hours for all flavors to settle and vinegar to lose some of its tang).

As prepared in my photo it was minus the cilantro, brown rice was used in place of wild/brown rice blend and a green pepper instead of red due to taste preference/on hand ingredients)
